Frédéric never drank a drop of alcohol until he was 19, due to his dedication to football, yet today he is renowned among Champagne producers for his keen tasting abilities and his relentless exploration of the world of wine.
Frederic lets the wines speak for the vintage. Most of Savart’s wines are fermented in stainless steel, although he is increasing the use of barriques, which he has been working with since 2004. Malolactic may be carried out or not, depending on the individual wine and the particularities of the vintage.
Champagne Savart Dame de Coeur 2012
This is the last vintage of this single-vineyard, 100-percent chardonnay champagne to be called La Dame de Coeur, and as of 2013, it will be labeled with the name of the parcel, Le Mont des Chrétiens. It’s well-balanced as a non-dosé, its rich, ripe flavors of stone fruit and citrus feeling lively and focused without being austere. True to its vintage, it remains relatively closed for the moment, but it should develop more complexity and length with post-disgorgement age.
