Frédéric never drank a drop of alcohol until he was 19, due to his dedication to football, yet today he is renowned among Champagne producers for his keen tasting abilities and his relentless exploration of the world of wine.
Frederic lets the wines speak for the vintage. Most of Savart’s wines are fermented in stainless steel, although he is increasing the use of barriques, which he has been working with since 2004. Malolactic may be carried out or not, depending on the individual wine and the particularities of the vintage.
Champagne Savart L’Accomplie
This is a Premier Cru plot witha blend of 80/20 Pinot Noir / Chardonnay. A large portion of the Pinot noir is made of old vines (Selection Massle) with the base vintage from 2012. Aged in 50% 500L barrels and the rest in stainless steel, this wine has classically pure with very clean fruits. Rather muted upon the first pop, the weight of the wine grows and turns into a expressive dance of minerals after ~45 minutes in the bottle. This has all the great hall mark of a great wine! Yummilicous. Wine Advocate 92 points.
