Cépage: 60% Pinot Noir, 30% Chardonnay, 10% Pinot Blanc
Base wine: 2022 vintage (65%), Reserves from 1982 to 2021 (35%)
Terroir: Vallée de l’Ource (from the villages Landreville, Essoyes and Celles sur Ource), all containing kimmeridgian chalk and clay marls in the soil
Vinification: Fermentation and malolactic conversion
Aged for 12 months with indigenous yeasts, 3/4 in barrels, 1/4 in steel tanks.
No sulphite addition.
Ageing: 12 months on lees
MCR 24g/L, traditional foaming at 6 bar pressure
Dosage: 0.5g/L

About the Producer

Charles Dufour is part of Champagne’s new wave of independent grower-producers, known for his bold, minimalist approach and deep respect for nature. Based in Landreville in the Aube, he took over his family's vineyards in 2006 and transformed the farming processes biodynamically, whilst overcoming the challenges of the unpredictable climate in the region. All his wines were certified organic in 2010. Charles’ winemaking style embraces purity and transparency, with native yeasts, no dosage, no sulphites, no fining or filtration. The minimal intervention in the cellar alludes to the natural freshness and artisanal imprint in the wines, with each cuvée expressing its terroir with honesty. The extensive ageing on the lees yield complexity with unique character.
