The Producer

Domaine Guilbert Gillet was co-founded by Benjamin Guilbert and Réne Gillet in 2020, and operated by Benjamin and his wife Caroline. The estate is based in Savigny-les-Beaune and covers 3.6 hectares of vineyards in Savigny and Chorey.

Benjamin, who accumulated extensive experience at some of the most renowned estates, takes Jacky Truchot, the former Morey-Saint-Denis producer as his mentor and inspiration. He embraces the traditional Burgundian winemaking approach in which every process from harvest to bottling is done by hand. The red grapes are fully destemmed and undergo long maceration and slow and gentle pressing. The wines are aged in barrels for at least 18 months without racking and bottled during a favourable lunar phase.

The viticulture is committed to organic and sustainable practices, with the vines pruned and trained on the trellising system. Detailed work on each vineyard differs catering to its unique traits and needs, to allow full individual expressions of the micro-terroirs. The domaine produces mostly parcellaire wines that showcase the nuances in the terroir. Since its relatively recent inception, the domain has seen remarkable milestones. From having 3 cuvées from the domaine and 14 negoce for the 2021 vintage, the domaine now has 14 domaine and 4 negoce cuvées for the 2022 vintage - most of which have become highly sought after in the market.
