Terroir: ‘Les Champs Michaux’, a plot located north of Mercury and south of Rully, above the Mercury 1er Cru ‘Les Croichots’, on a plateau between two plots of woods
Soil: Clay-limestone soil with stony red earth on the surface

Density and Yield: 10000 vines/ha; 45hl/ha
Vinification and aging
Grapes rigorously sorted in the vineyard and transported in 20kg crates
Direct vatting in 100% whole bunches, without sulfur and with indigenous yeast
Vatting for two to three weeks in stainless steel vats without thermoregulation
First light crushing after the start of alcoholic fermentation then punching down daily until devatting
Malolactic fermentation and aging in stainless steel vats for 9 months
Minimal sulfite addition after racking or before bottling
Tasting:
Nose: floral, fruity (red fruits), a little musky, subtle and airy
Palate: showing finesse, fresh, airy with the elegance of the stem

The Producer
"Maison Réno, an estate based in ‘Les Pepites’, Chassagne Montrachet, Burgundy, is founded by the young producer Réno Pacalet. It premiered its first vintage in 2023 with red and white cuvées from seven appellations in the Côte de Beaune. Prior to the establishment of the estate, Réno had been already well immersed in every facet of winemaking. Amongst his diverse practical experience, Réno performed internships in Tuscany in 2014 - 2016, and also exhaustively understudied his father, Philippe Pacalet in their family estate. Réno is also well accredited with the BTSA viticulture-œnologie diploma.
Within the negoce framework, Réno makes decisions on harvest dates, and performs harvest operations with his own team. In the winemaking processes, he focuses on finesse and infusion rather than extraction. Réno uses only old oak, natural yeast and low sulfur in his pursuit of purity, elegance and personality in the wines. The current total production volume is at 10 000 bottles."
