The word ‘Senex’ is a Latin adjective which characterises people over sixty years old. This cuvée is a blend produced from the oldest plots in Nolay and Beaune. The old vines project very low yield, of between 15 and 20hl/ha each year. 600 - 900 bottles produced each year.

Varietal: Pinot Noir

Terroir: Plant-based biodynamic preparations are applied to the soil. Green manure is implemented, after extensive cover cropping is established for years.
Short pruning, extensive cover cropping with natural grass allow the grapes to achieve exceptionally high concentration.

Vinification: Minimalist winemaking based on ancestral techniques. Sulphites and any other form of inputs eschewed.The grapes are lightly pressed, then go through semi-carbonic vatting in whole harvest for a few days.

Ageing and Bottling: 18 months in oak barrels (50% new oak) on fine lees. The wines are allowed to stabilise naturally for 5 to 6 weeks before bottling. Bottling by hand with a manual bottle filler and corking machine.

The Producer

Domaine de la Roseraie is a fruit of labour for Julien Petitjean, a former historian who made a career switch to viticulture and winemaking at the beginning of the 2000s. The domaine was incepted in 2012, and currently comprises a 5 hectare vineyard with 2.8 hectares producing wines.

In search of the most natural wine production methods and in his endeavour to replicate the vibrance in cuvées reminiscent of pre-technological eras, he explored and applied medieval winemaking techniques, resurrecting simplicity and purity in the processes.

The principles of biodynamic are followed, with cover cropping practised and biodiversity embraced. Vinification stays truthful to ancient techniques. Julien leaves the wines as long as it takes, sometimes years, to complete the fermentation process. Wines are bottled by hand without fining and filtration, nor addition of sulfites.
