Notes from Thomas, the winemaker:
The Sylvaner grape is the DNA or the keystone of the Soil Therapy project in a way. Fascinated by
this grape and its many possible expressions, I have been pacing up and down the Alsace vineyard
hunting down the rare old plots that survived the massive decline period that it faced from the 1980s
on. Indeed, at that time, multiple factors like the emergence of spakling wines and the creation of
Grand Crus sounded the death knell of this previously prevailing grape variety.
Today Sylvaner makes 50% of Soil Therapy's production while making a poor 7% of the total
Alsace vineyard. Being against the flow is kind of a second nature for us !
We have already explored Sylvaner in the context of a blend (it is the main grape in Le Geste) as
well as in a single-vineyard expression. Here we have yet another approach, where we look for the
optimum balance between freshness and spontaneity of the grape, and a depth of texture and
structure taken from the terroirs, the ageing process, and the slight skin contact where opportune.
The word Réserve is kind of old-fashioned and overused in wine branding but we think it
symbolizes perfectly what we try to achieve with this wine : a blend of high-quality village and
lieu-dit wines, vines above 40 years old, and mainly clay+limestone soils.
The winemaking and aging is done half in stainless steel (village plots) and in oak (single
vineyards) for the aging.
Most importantly, it is a tribute to the greatness of Sylvaner from the old days, before it was
massively produced in the flatter areas with abundant yields, when it had texture and dry extract and
could age gracefully.
Soil Therapy
Founded in 2017 by Thomas Larmoyer, Soil Therapy is a terroir-driven micro-négociant at the forefront of Alsace’s new wave of winemaking. The project works closely with artisan growers practising organic and biodynamic farming, sourcing grapes from a small selection of lieu-dits chosen for their distinctive soils and individual expressions of place.
Sylvaner and Riesling form the heart of the range, which includes both single-vineyard cuvées and blends. The wines are made with a minimal-intervention approach, using spontaneous fermentations, co-fermentation in blends, extended ageing, old barrels and minimal sulphur additions. These methods are intended not to impose a house style, but to preserve the character of each site.
The resulting wines are precise, textural and mineral-driven, with the bone-dry finishes that have become a defining feature of Soil Therapy. They offer a fresh and contemporary interpretation of Alsace, distinct from the broader and sweeter styles historically associated with the region. Production remains deliberately limited, with every cuvée made in micro-batches.
A self-taught winemaker, Thomas previously worked as Sales Manager at Domaine Ostertag, one of Alsace’s pioneering biodynamic estates. That experience continues to shape Soil Therapy’s commitment to authenticity, precision and transparent expressions of terroir.
